I got this recipe from a Portuguese friends of my mother. It’s a very rich dish but unbelievably tasty!
Ingredients for 4 people:
- 400g Stock-fish
- 300g Potatoes
- 3 Eggs
- 1 1/2 Portuguese Onions
- Salt / Pepper / Nutmeg
- 2l Milk
- 2l Oil (or a Chip Pan)
Depending on what stock-fish you’ve bought you’ve to soak it in first. If you bought salted one you have to desalt it over 24h in water, changing the water every 7 hours or so. In the last soaking circle you can exchange the water by milk.
Now: Take a pot, add the milk and the fish and let bring it to boil for 10 minutes. After that grind the fish and take out all the bones. Boil the potatoes in the fish-milk-brew, peel them after and then mash them into the grinded fish. Add the eggs. (If you beat the egg whites foamy, the bolinhos will be more fluffy.)
Now add the fine chopped onions, the parsley an season to taste.
Heat up the oil and form with two tablespoons little balls. Fry them until they are brown!
You can eat the bolinhos cold or heated up!
