Cheese-Soufflé

I got this recipe from a good friend of mine! I hope you enjoy it as much as I do!

Ingredients for 4 people:

  • 100g Margarine
  • 120g Flour
  • 1 Bouillon Cube
  • 1l Milk
  • 6 Eggs
  • 200g Grated Cheese
  • 200g Fine Breadcrumbs
  • Nutmeg
  • Salt / Pepper

Preheat the oven to 180°C.

Melt the Margarine in a pot and add the Margarine. Add bit by bit the Milk under constant stirring, season to taste. Dissolve the bouillon cube in a glass of water and add it to the mixture.Then separate the egg yolks from the egg whites. Beat the whites to a foam.  Heat the mixture up until it boils and gets stiffer. Get the pot of the heat and add the egg yolk under stirring. Mix the cheese into the mixture and fold in the egg-foam.

Grease two casseroles and  powder with breadcrumbs. Now pour the mixture into the casseroles. Put them in the oven until the soufflé rises. DO NOT OPEN THE OVEN UNTIL THE SOUFFLE IS DONE!
