My Bolognese

Strongly influenced by my Mom’s Spaghetti (yes :)) and a few reads on the Internet I got the recipe of a pretty decent sauce bolognese. And there you go:

Ingredients for 4 people:

  • 1kg Ground Beef
  • 3 Garlic Cloves
  • 3 Carrots
  • 1 Green Sweet Pepper
  • 3 Celery Stalks
  • 2 Onions
  • 500g Canned Tomatoes
  • 100g Fresh Tomatoes
  • 125g Butter
  • 500ml Milk
  • Olive Oil
  • 1 Chili
  • Salt / Pepper
  • Basil
  • Red Wine

The most important part is the so called “Soffritto”: Melt the butter with the olive oil in a pan. The olive oil prevents the butter from burning. Let the very small chopped onions, carrots, sweet pepper and celery stalks slowly cook in the butter. (30 minutes, very low flame)

In the mean time sear the beef in another pan until it starts to caramelize. Add the onions. Deglaze it with a sip of red wine. Now add the milk and bring the mix to a boil. After this point add the canned tomatoes and the diced fresh tomatoes. Again let it bring to a boil and add the “Soffritto” and the chopped garlic.

Season to taste with salt, pepper, basil and the chili.

Let it simmer for at least 5 hours (you can’t let it simmer long enough)
